Ingredients

  • CRUST
  • 3 cups cooked cassava, mashed
  • 2 Tbsp finely chopped mixed fresh herbs (celery, chives, garlic, marjoram, parsley, thyme, hot pepper)
  • No-stick spray
  • PIZZA SAUCE
  • ¼ cup chopped onions
  • ¼ cup chopped sweet pepper
  • ¼ cup chopped celery
  • 1 – 8 oz can ‘No Salt Added’ tomato sauce
  • ½ - 14 oz can ‘No Salt Added’ stewed tomatoes, chopped
  • 2 Tbsp finely chopped mixed fresh herbs (celery, chives, garlic, marjoram, parsley, thyme, hot pepper)
  • 2 cloves garlic, minced
  • 2 tsp olive or canola oil or No-stick spray
  • ½ tsp sugar (optional)
  • TOPPINGS
  • ½ cup thinly sliced onion
  • ½ cup thinly sliced sweet pepper
  • ½ cup chopped canned pineapple
  • ½ cup thinly sliced mushrooms
  • ½ cup shredded Mozzarella cheese
  • ½ cup shredded Swiss cheese

Instructions

  • 1. To make pizza sauce, heat saucepan and add 2 tsp olive or canola oil or coat with No-stick spray if preferred. Add onion, sweet pepper and celery and sauté 3-4 minutes, stirring constantly
  • 2. Add all other pizza sauce ingredients and simmer gently 10-15 minutes. This mixture can be puréed to make a smooth sauce if desired
  • 3. Pre-heat oven to 425°F/220°C. Coat 12” pizza pan with No-stick spray. Mix mashed cassava with herbs. Spread on top of pizza pan and press down to make firm base
  • 4. Spread pizza sauce on top of cassava. Any remaining sauce can be frozen for future use. Add first 4 toppings. Finish with cheese and bake in oven 25-30 minutes or until golden brown
