Ingredients

  • 1 pack (400g) high fibre pasta
  • ¼ cup chopped onions
  • ¼ cup chopped celery
  • ½ cup chopped sweet pepper
  • 1 - 14 oz can ‘No Salt Added’ stewed tomatoes, chopped
  • 1 – 8 oz can ‘No Salt Added’ tomato sauce
  • 1 cup finely chopped spinach
  • ½ cup corn
  • 2 Tbsp finely chopped mixed fresh herbs (celery, chives, garlic, marjoram, parsley, thyme, hot peppper)
  • 2 cloves garlic, minced
  • 2 tsp olive or canola oil or No-stick spray
  • ½ tsp sugar
  • ½ tsp salt (optional)
  • 2 cans tuna, drained
  • ½ cup finely grated Swiss cheese

Instructions

  • 1. Cook pasta in boiling water until tender but still firm. Drain and set aside
  • 2. To make sauce, heat saucepan and add 2 tsp olive or canola oil, or coat with no-stick spray if preferred. Add onion, celery and sweet pepper and sauté 3-4 minutes, stirring constantly
  • 3. Add all other ingredients except tuna and cheese; simmer gently 10 minutes
  • 4. Add the tuna and then mix the tuna sauce with the pasta; pour into oven-proof dish and sprinkle grated cheese on top. Bake at 400°F/200°C for 15 minutes or until cheese begins to brown
